Do you think it would become mushy. The only substitution I made was instead of chicken breasts I used boneless skinless chicken thighs for a deeper flavor. Meanwhile, bring the 3 cups of liquid to a boil. I would be a fan of all the various flavors.I used instant brown rice, added to the slow cooker the last 45 minutes. This dish was fantastic. Then I added garlic, caye. People love the smell of it cooking.
I also got home really late from work and the kids were starving, though. We all loved it and will make it again and again. It is quite good, so I threw in already cooked shrimp and it only took a few minutes to heat up. This sounds very good.

After the rice was done I mixed it into the jambalaya mix and served with garlic bread. The only other problem is that there wasn't much left over.

Based on reader feedback, the recipe was revised slightly to allow for the rice to cook longer. I thought this was fantastic. I have had this recipe on my "need to try" list for quite some time and finally got brave enough to try it. As a Louisiana Cajun we thrive to know the difference. It turned out so good.I added some more cajun spice too because I started reading other recipes and they said 2 TBL of Cajun spice. I thought it was bland, soupy and just not great. If only I had a slow cooker…. Biscuit Beignets.
